Kogel-mogel with fruits

Kogel-mogel is a dessert made from raw egg yolks and grated with sugar. This is the basic version, to which you can add cocoa, lemon juice, vanilla or chocolate. I usually make it with orange juice and serve it with fruits. For this version of kogel-mogel you can find a recipe below. Kogel-mogel probably reminds many of you of your childhood, it is also as such in my case 🙂 I don’t make it too often, but when I do it, it always tastes special. Ingredients for kogel-mogel.

  • 4 big egg yolks
  • 5 tablespoons crystal sugar
  • 3 tablespoons of orange juice
  • 300 g frozen fruit e.g. forest fruit or sour cherries
  • 1 full teaspoon of potato flower
  • 5 tablespoons of water

How to make kogel-mogel.

Start the preparation of kogel-mogel by tempering the eggs. Then, separate the egg whites from the yolks and put only the yolks into a medium-sized bowl. Add 4 tablespoons of granulated sugar and grate or beat them to a fluffy, almost white consistency, preferably with a hand mixer. Rubbing or mixing should take about 4-5 minutes. At the end of mixing, pour in the orange juice with a small string, while continuously whisking. I can tell you from experience that orange juice combines better with sugar-grated eggs when you prepare it over a water bath.

I start preparing the fruits by putting frozen or fresh fruits into a cooking pot and adding 1 tablespoon of granulated sugar to them. Next, bring the fruits to a boil and simmer it for 3-4 minutes. Meanwhile, mix water with potato flour in a cup and pour it over the soft fruits. Cook it together for 2-3 minutes then cool it down.

I serve the kogel-mogel immediately in a cup or a mug, on the bottom of which I place cold fruits.

Good to know when making kogel-mogel.

Sour fruits are the best to serve with kogel-mogel. I generally choose a mix of forest fruits, but sour cherries and blackberries work just as well.
