I use pickled peppers in salads, sandwiches and add them to hot dishes. Due to the lack of time, I do not make pickled peppers at home, I usually just buy them. I must admit that they taste as nice as those ones which my mum normally makes at home.
Recently, I prepared a simple salad in which I used pickled peppers, to which I added just a few extra ingredients like eggs, sweetcorn and mushrooms. This is a salad which has a creamy, rich consistency and can fill you in perfectly.

Ingredients for pickled peppers salad.
- 6 hard-boiled eggs
- 100 g pickled mushrooms
- 200 g canned sweetcorn
- 400 g pickled peppers
- 4 pickles
- 1/2 teaspoon of salt
- 1/6 teaspoon of black pepper
- 4 tablespoons of mayonnaise
- 2 tablespoons of sour cream (18%)
How to make pickled peppers salad.
Peel the eggs then dice them.
Cut the peppers into thin strips.
Cut the mushrooms into very small cubes. They can also be chopped very finely.
Peel the cucumbers, squeeze out the juice and cut them into medium-sized cubes.
Drain the sweetcorn from its water.
Put all the ingredients in a bowl, add salt, pepper, mayonnaise and cream. Mix it well.
Store the salad in the fridge.

Good to know when making pickled peppers salad.
I used marinated peppers in a brine with vinegar.
I opted for pickled mushrooms, however, you can replace them with mushrooms marinated in water brine.
