On hot days, cold desserts can sweeten your mood as well as cool down you body. Cold desserts can have various textures and can be served in many different ways. To prepare cold desserts, you can use yoghurt, cream, mascarpone, cottage cheese or homogenized cheese. Very often, cold desserts also have fruits in them. What fruits can be found in such desserts depends on what kind of fruits you like and have available at home.
I used fresh blueberries for the dessert in a cup in the below recipe, because firstly, their season has just started, and secondly, they perfectly matched my slightly orange-flavoured yoghurt cream.
Ingredients for yoghurt dessert with blueberries.
- 300 g Greek yoghurt
- 10 tablespoons of freshly squeezed orange juice
- 4 tablespoons of icing sugar
- 150 ml heavy cream (36%)
- 125 g fresh blueberries
- a few leaves of lemon mint
- 60 g Amaretti cookies
How to make yoghurt dessert with blueberries.
Combine Greek yogurt, orange juice and icing sugar in a cup. Next, set it aside for 15 minutes.
Crumble the Amaretti cookies.
Whisk the cream in a bowl until half stiff. Add a cup of yogurt to it and continue whipping for a few seconds.
Arrange the crumbled cookies, cream and blueberries alternately in cups or glasses. Decorate the top of the dessert with blueberries and lemon mint leaves.
Keep the finished desserts in the refrigerator.
Good to know when making yoghurt dessert with blueberries.
The crushed Amaretti cookies should have a consistency of bread crumbs. This consistency can be obtained by crushing the cookies in a mixer or by placing them in a bag and tapping the bag with a kitchen pestle.
It is very important to opt for Greek yoghurt. It has a different taste and texture to natural yoghurt, so do not replace it with any other yoghurt.
I served my desserts in martini glasses. In total, I got 3 pieces. Please note that the glasses I used were quite large.
You can prepare the desserts in small cups as well. If you are making more pieces, you may want to increase the amount of Amaretti cookies.
