Viennese cheesecake is a very simple, yet tasty cheesecake, the main ingredients of which are eggs, quark cheese, sugar and butter. After baking, you can sprinkle it with icing sugar or decorate it with dark chocolate.
When it comes to additions, raisins can be found in Viennese cheesecake quite often. Unfortunately, I avoid them, because my husband, who loves all kinds of cheesecakes, does not like raisins. If you don’t have such a problem, I recommend adding raisins to this cheesecake.

Ingredients for Viennese cheesecake.
- 1 kg minced quark cheese
- 200 g butter
- 6 big eggs
- 200 g icing sugar + a little for dusting
- 1/4 teaspoon of freshly grated orange zest
- 1 tablespoon of potato flour
- 1/4 teaspoon of vanilla extract
How to make Viennese cheesecake.
Put soft butter in a bowl, add icing sugar and rub it for 6-7 minutes. After that, add one egg at a time while continuing rubbing. Then add the quark cheese, orange zest, potato flour and vanilla extract in small batches. Combine all the ingredients thoroughly and pour them into a baking tin.
Preheat the oven to 180 degrees Celsius and when hot, put in the cheesecake. As soon as you do so, reduce the temperature to 165 degrees Celsius. Bake the Viennese cheesecake for 1 hour and 15 minutes. After baking, remove the cheesecake from the oven and let it cool down completely before slicing. Before serving, you can sprinkle the cheesecake with icing sugar.
Good to know when making Viennese cheesecake.
All the ingredients used to prepare the cheesecake should be at room temperature.
I used a round-shaped baking tin with a diameter of 25 centimetres, which I lined with baking paper.
You can add raisins to the cheesecake. Before doing so, it is a good idea to soak them in boiling water, dry them and coat them in potato flour.
