Mushroom soup with pasta
This mushroom soup will be a great dish to serve during the Christmas holiday season, but not only then. I prepared the soup with dried forest mushrooms, celeriac root, parsley and potatoes. I seasoned it with cream and tarragon and served it with cooked pasta.
In this soup I used a mix of forest mushrooms. Normally, I would have used dried porcini mushrooms, but I couldn’t get them anywhere. If you find dried porcini mushrooms in the store, I recommend that you use those instead of a mushroom mix.

Ingredients for mushroom soup.
- 40 g dry forest mushrooms
- 50 g parsnip
- 100 g celeriac root
- 250 g potatoes
- 2 full teaspoons of salt
- 1/2 teaspoon of black pepper
- 2 l water
- 1,5 tablespoons of butter
- 1 teaspoon of dry tarragon
- 200 ml cream (30%)
- 100 g pasta e.g. ribbon shape (for serving)
How to make mushroom soup with pasta.
Put the mushrooms in a bowl, pour cold water over them and set aside for a few hours, preferably overnight, to soak. Drain the water from the soaked mushrooms, put them in a pot and add 500 ml of fresh water (out of the 2 l). Bring it to boil, then simmer covered for an hour or until the mushrooms are tender.
Peel the celeriac and parsley, then cut them into small cubes and put them in a pot along with the butter. Fry over a medium heat for 10 minutes. Next, add tarragon, the remaining water (1.5 l) and potatoes peeled and diced into medium-sized cubes. Bring it all to boil, then simmer for 20 minutes. At the end of cooking, add the cooked mushrooms with the water in which they were boiled, salt, pepper and cream. Simmer together for 5 minutes.
In a separate pot, cook the pasta according to the instructions on the package.
Serve the soup with pasta.

Good to know when making mushroom soup.
Depending on whether you use one type of mushrooms or a mixture of several ones, they may require different cooking times. I used a mixture of wild mushrooms and cooked them for a total of one hour. While cooking, it is worth checking from time to time whether the mushrooms are soft or whether they still need a few extra minutes on the heat.
