Pretzels with almond sprinkle

A pretzel is a baked yeast-based dough formed into any shape, most often with a knot in the center, covered with sprinkles. You can use grains, spices or salt as sprinkle. Pretzels taste good with both sweet and savoury toppings.

I decided to make my pretzels with a finely chopped almonds topping. I ate these kind of pretzels a long time ago back in England. I liked them very much and since then I have made them at home a few times. Almonds give pretzels a slightly sweet taste, which I personally like a lot.

You can serve pretzels as an addition to soup or beer, but of course you can also eat them simply on their own, especially right after baking, because they taste best when taken out of the oven and still warm.

Ingredients for pretzels.

  • 7 g gry yeast
  • 1 teaspoon of crystal sugar
  • 210 ml lukewarm water
  • 400 g all-purpose flour + a little for dusting the pastry dough
  • 1/2 teaspoon of salt
  • 1 tablespoon of sof butter
  • 80 g soda bicarbonate
  • 1,5 l hot water
  • 4 tablespoons of icing sugar
  • a little of sunflower oil
  • 60 g finely chopped almonds

How to make pretzels with almond sprinkle.

Put the yeast, crystal sugar, 1 tablespoon of flour and warm water into a bowl. Mix and set aside for 10 minutes.

Sift the remaining flour into a bowl, add the rising yeast, salt, icing sugar and soft butter. Mix then knead the dough. Knead the dough for 8 minutes, after which put it in a bowl lightly greased with oil, cover with a cloth and leave it to rise for 50 minutes.

Pour boiling water into a large bowl, add baking soda and mix.

Place the dough on a pastry board, lightly dusted with flour and divide it into 10 parts. Form a thin rope about 60 centimetres long from each part and twist it into a pretzel shape. Dip each pretzel for a few seconds in the hot water previously mixed with baking soda, place them on a baking sheet lined with baking paper and sprinkle with ground almonds. Preheat an oven to 230 degrees Celsius and place the tray in. Bake the pretzels for 8 to 10 minutes.

Good to know when making pretzels with almond sprinkle.

The pretzels in this recipe are a type of soft pretzels, which means that they taste best served on the same day. However, if you want to eat them in the following few days, I would suggest that you freeze the already baked pretzels. When removed from the freezer and defrosted, they will still taste just as fresh.

I divided the dough into 10 parts, that’s why I got 10 pretzels from the given amount of ingredients.

Forming pretzels is easy. The dough rolled out into a shape of a rope should be grabbed by both ends, which then need to be twisted as if we wanted to tie them. Create something like the letter “B” shape, then tuck the ends underneath or slightly curl outwards. On Instagram, I added a photo of me shaping the dough into a pretzel shape.

First, I shaped all the pretzels and when they were ready, I dipped them in the water with baking soda, one by one.

For sprinkling the pretzels, you can use coarsely ground salt, cumin, poppy seeds, nuts, cinnamon or sesame seeds.
