Are you looking for a tested recipe for sauerkraut with beans? If so, then you must try this recipe for cooked sauerkraut with beans. It is one of the obligatory dishes on Christmas Eve tables in most Polish households.
Some people make this type of sauerkraut also with forest mushrooms instead of beans. You can find the recipe on the blog for that version of the cabbage as well. When preparing sauerkraut with this recipe, I do not thicken it in any way by adding flour to it. Other than beans and potatoes I am only adding a bit of butter and onion to it.

Ingredients for cabbage and beans.
- 700 g sauerkraut
- 800 ml water
- 200 g beans
- 2 medium-sized potatoes
- 1 small onion
- 1 tablespoon of butter
- 2 teaspoons of salt
How to make sauerkraut with beans.
Pour water over the beans or peas and let them soak for several hours. After soaking, put them in a pot, add water and cook with 1 teaspoon of salt until soft. Add the salt at the end of cooking.
Put the sauerkraut in a pot and add 800 ml of water. Simmer until the water is almost completely evaporated and the cabbage is tender. At the end of cooking, add 1/2 teaspoon of salt to it.
Peel the potatoes and cut them into large cubes. Put them into a pot, add 1/2 teaspoon of salt and water. Cook until tender. Drain the water and lightly mash the potatoes with a fork.
Put the butter in a pan and add finely diced onion. Fry on a low heat until golden brown.
Add the cooked beans, potatoes and fried onion to the soft sauerkraut, mix and cook together for 5 minutes. Serve the dish warm.

Good to know when making sauerkraut with beans.
I used beans with medium-sized grains.
The finished dish can additionally be baked. I personally do not do that.
