Sweetcorn salad
Sweetcorn salad with cocktail tomatoes, bell pepper, onion and blue cheese is a fresh, light and citrusy salad that I am recommending for you today. I made this quick salad quite recently and used grilled corn to prepare it. Grilled corn can only be obtained from the cobs of fresh corn, which are available mainly in the season. If you make this salad out of season, you will need to buy canned sweetcorn.
When I first made this salad, I didn’t want it to contain only vegetables, so I added some blue cheese. This combination of blue cheese with vegetables, olive oil and lime juice turned out to be delicious. It was hard for me to pull myself away from eating the salad while making it. This sweetcorn salad tastes best when served by itself, it works well as an addition to grilled meat and dinner dishes. Below, I have some suggestions for you on how to serve sweetcorn salad.

Ingredients for sweetcorn salad.
- 250 g sweetcorn
- 150 g blue cheese
- 250 g cocktail tomatoes
- 50 g red onion
- 150 g green bell pepper
- 2 tablespoons of olive oil
- 1/2 teaspoon of salt
- 2 tablespoons of lime juice
- a few leaves of fresh coriander
- 1/4 teaspoon of pepper
How to make sweetcorn salad.
Put the sweetcorn, diced blue cheese, finely chopped onion, sliced pepper and halves of cocktail tomatoes into a bowl. Combine the olive oil with salt, pepper, lime juice and sliced coriander leaves in a cup. Pour the sauce from the cup into the ingredients in the bowl and mix.

Good to know when making sweetcorn salad.
This salad can be prepared with grilled corn or canned corn. The recipe for grilled corn can be found HERE. Before adding canned corn to the salad, first pour out the brine from it.
The cocktail tomatoes I used in this salad were orange and very sweet. Red, yellow, black and green-red cocktail tomatoes will work just as well in this salad. Cocktail tomatoes can be replaced with any type of tomato, but before adding them to the salad, they should be cut into large cubes or quarters.
