Gorgonzola sauce is intensely peppery thanks to the addition of marinated peppercorns and coloured ground pepper. Chicken prepared like this can be served with gnocchi, potato dumplings, Silesian dumplings, boiled rice or mashed potatoes. Ingredients for chicken in gorgonzola sauce.
- 200 g gorgonzola cheese
- 1 tablespoon marinated green peppercorns
- 1/4 teaspoon of ground colourful pepper
- 1 big clove of garlic
- 1 tablespoon of butter
- 300 ml heavy cream (30%-36%)
- 50 g Parmesan cheese
- a pinch of salt
- 500 g chicken breast
- 2 tablespoons of oil
- 1 teaspoon of salt
- 1/4 teaspoon of ground pepper
How to make chicken in gorgonzola sauce.
Drain the green peppercorns from the pickling brine and crush them in a mortar. Put the butter and mashed garlic into a pot and fry for a few seconds. Following that, add the crushed peppercorns, coloured pepper, a pinch of salt, cream, then bring it to a boil and simmer for about 15 minutes. The cream should evaporate a little, which will give the sauce a creamier texture. Next add the crushed gorgonzola cheese and the grated Parmesan cheese. Stir continuously until the cheeses are completely dissolved, it may take about 4-5 minutes.
Clean the chicken breasts, rinse them under running water and dry with a paper towel. Subsequently, cut them lengthwise in half and rub them with a pinch of salt, pepper and oil. Put a grill pan on the heat and warm it up. Once the pan gets very hot, arrange the chicken breasts on it and grill them on both sides over a medium-high heat for about 8-10 minutes in total.
Serve the grilled chicken breasts with gorgonzola sauce, sprinkled with chopped parsley.
