I will probably not surprise anyone with this recipe, but I will still share it anyway. I first read about this recipe, if I count correctly, about 14 years ago. So a very long time ago. I always make gyros salads according to this recipe and I haven’t changed anything in it since I got it.

The basis of my gyros salad is fried chicken breast, which I season with gyros spice, garlic and herbs de Provence. As for the additions with which I combine the fried meat, there are gherkins, onion, sweetcorn, eggs and Chinese cabbage. There are some recipes for Gyros salads that I came across where the salad is flavoured with garlic sauce. I don’t season my salad with it, instead I use mayonnaise and ketchup. Ingredients for gyros salad.

  • 1 kg chicken breast
  • 1/2 teaspoon of salt
  • 2 teaspoon of Gyros spice mix
  • 1/2 teaspoon herbs de Provence
  • 1 big clove of garlic
  • 100 g onion
  • 4 hard-boiled eggs
  • 1 tablespoon of oil
  • 200 g gherkins
  • 8 tablespoons of mayonnaise
  • 8 tablespoons of ketchup
  • 150 g Chinese cabbage
  • 150 g canned sweetcorn
  • 1 teaspoon of chopped chives

How to make gyros salad.

Wash the chicken meat, dry it, cut it into medium-sized cubes, then put it in a frying pan. Add the oil and the mashed garlic, then fry it over a medium heat until the water from the meat has almost completely evaporated. At the end of frying, add salt, gyros spice and herbs de Provence. Let the fried meat to cool down.

Cut the Chinese cabbage into thin strips, chop the eggs and cucumbers into small cubes, drain the sweetcorn from its brine, and dice the onion into very small cubes.

Put the chicken meat in a large bowl, cover it with the onion, then spread ketchup evenly on it. Next, arrange the chopped cucumber, eggs, mayonnaise, sweetcorn and Chinese cabbage. Sprinkle the salad with finely chopped chives on top.

Good to know when making gyros salad.

Both spicy and mild ketchup work well in this salad. I have gone for spicy ketchup.

Hard-boil the eggs in salted water for 8-9 minutes, depending on their size.

I did not peel the gherkins. After dicing them, I squeezed the excess juice out of them.
