Green lentil stew
The taste of this vegan stew will surely surprise you, because it is slightly spicy and herbal. In addition, this simple stew is extremely filling. The basis of this stew is green lentil, rich in protein and fibber, and after cooking it has a soft and loose consistency. In addition to lentils, you will also find carrots, onions and canned tomatoes in the stew. In season, you can bet on fresh tomatoes, which is enough to cut into small cubes, but out of season, it is better to use canned tomatoes. This dish could not lack fresh herbs, and I decided to settle on using a few, including rosemary and thyme.
I serve this simple lentil stew with bread, usually for dinner as a main course. It can also be served as an addition to other dishes, such as roasted poultry or grilled sausage. If you don’t want to serve the stew with bread, you can replace it with a fried egg or a sour cream, because both of these additions work very well here. Ingredients for green lentil stew.
- 250 g dry green lentil grains
- 150 g onion
- 1 big clove of garlic
- 200 g carrot
- 800 ml vegetable broth
- 1 and 1/2 teaspoon of salt
- 1/2 teaspoon of black pepper
- 400 g canned tomatoes
- 1/4 teaspoon of grated lemon zest
- 2 springs of rosemary
- 2 springs of thyme
- 1 dry chili pepper
- 2 tablespoons of sunflower oil

How to make green lentil stew.
Rinse green lentils in cold water, then pour into a sieve.
Put the diced onion in a pot, add oil and fry over a medium heat for 4-5 minutes. Next, add the mashed garlic, chili pepper and continue frying for a few seconds. Then, pour in the vegetable broth, add the sliced carrots, lentils, salt, pepper, tinned tomatoes, rosemary, thyme and lemon zest. Bring everything to a boil and slowly cook over a low heat, covered, for about 35-40 minutes or until the vegetables are tender.
