Vegan chickpea sandwich spread

Lard spread made with fried pork fat or bacon combined with onion is very popular in Poland. Such a lard spread, of course, is not suitable for people who do not eat meat. However, nothing prevents you from making a similar sandwich spread only from vegetables. I used millet, chickpeas and onion to prepare a vegan version of that lard sandwich spread. The taste of this spread is of course very different from the one made with bacon, but it is still just as good. Be sure to prepare this simple spread at home, I’m sure you will like it.

Onion and chickpea spread

Ingredients for onion and chickpea spread.

  • 3 tablespoons of olive oil
  • 300 g white onion
  • 250 g canned chickpeas (330 g with brine)
  • 100 g millet (grains)
  • 1 and 1/2 teaspoon of salt
  • 2 big garlic cloves
  • 1/4 teaspoon of black pepper
  • 1/2 teaspoon of dry oregano

How to make onion and chickpea spread.

Boil the millet according to the instructions on the package, drain it and let it cool down.

Pour the chickpeas with its brine into a pot then mash it with a pestle.

Peel the onion, dice it into small cubes and place it in a pan. Add the olive oil and fry over a low heat until the onion turns golden-brown. At that point, add the garlic and oregano. Continue frying for few more seconds, then put on the chickpeas and fry for 5 minutes over a medium heat. Finally, add the cooked millet, salt and pepper and fry for an additional 5 minutes. Remove the spread from the heat and let it cool down.

Good to know when making vegan chickpea spread.

I used canned chickpeas with its brine, which total weight was 330 g.

I served the spread on fresh bread. It can also be served on toasts, crackers or rice cakes.
