Red cabbage slaw with dried figs and pomegranate is a meatless addition to meats. Thanks to the use of sweet figs, this vegan slaw acquires a slightly sweet taste, while the addition of pomegranate gives it a delicate touch of tartness. This type of slaw is a nice addition, especially to fried and grilled meats and cheese. Preparing the slaw is quick and easy, and I usually start making it by shredding the cabbage. Next, I cut the figs, parsley and chop the nuts. I remove the seeds from the pomegranate and do it by tapping the outside of the fruit with the blunt side of a knife. I combine the dressing ingredients in a small bowl then pour it over the previously chopped vegetables and fruit.

Ingredients for red cabbage, figs and pomegranate slaw.
- 600 g red cabbage
- 100 g dried figs
- 1/2 pomegranate
- a small bunch of parsley
- 50 g toasted walnuts or pecans
- 3/4 teaspoon of salt
- 1/2 teaspoon of freshly ground black pepper
- 1 tablespoon of liquid honey
- 2 tablespoons of olive oil
- 2 tablespoons of lemon juice
How to make red cabbage, figs and pomegranate slaw.
Chop the red cabbage on a shredder or finely cut it with a knife, then put it in a bowl. Cut the dried figs into thin slices, chop the roasted walnuts into medium-sized pieces, and chop the parsley finely. Remove the seeds from the pomegranate. Mix lemon juice with olive oil, honey, salt and pepper in a small bowl. Combine shredded cabbage, pomegranate seeds, figs, nuts and parsley in a large bowl. Pour the dressing from the small bowl over the ingredients in the large bowl and mix. Keep the slaw in the refrigerator before serving.
