Guacamole
Avocado is a fruit that comes from Mexico. It is very popular in America, Asia and Europe. It is an excellent source of vitamins, proteins and fat. You can made dips, salads, smoothies, sandwiches and many other delicious dishes from that fruit.
The combination of avocado and boiled or poached egg is amazing. I make it often and serve with Hollandaise sauce. One day I will share with you the recipe for that dish as well, but for today I have the recipe for you for something else: guacamole.
Guacamole is a traditional dip without which Mexican cuisine would not be the same. Great taste, simplicity of preparation and availability of products are all great reasons why you should make it.

Ingredients for guacamole.
- 1 small tomato
- 2 ripe avocados
- 2 tablespoons of lime juice
- a bunch of fresh coriander
- 1 small red onion
- 1 small red chili pepper
- a pinch of black pepper
- a pinch of salt
How to make guacamole.
Cut the avocado in half, spoon out the pulp and put it in a bowl. Mash it with a fork.
Cut the tomato and onion into small cubes. Finely chop the chili and coriander.
Add the chopped ingredients to the mashed avocado. Mix thoroughly, while continuously crushing the ingredients with a fork. Add lime juice, a pinch of salt and pepper.
Serve on toasts, sandwiches, with vegetables or eggs.

Good to know when making guacamole.

The guacamole I made was not too creamy. I cut and crushed the ingredients but did not blend them. If you prefer creamy guacamole, blend all the ingredients.
You can replace the lime juice with lemon juice. However, it will change the flavour of guacamole quite significantly.
