Cabbage salad with vegetables
A cabbage salad with tomato, cucumber and red onion is perfect for meat dishes. Today I made fried chicken breasts for dinner, served with new potatoes and this cabbage salad. If you have a vegetable slicer, you will prepare this salad in 10 minutes. Without a slicer, it will take a while longer, because the vegetables will have to be cut with a knife. Ingredients for cabbage salad.
- 350 g fresh, new cabbage
- 300 g tomatoes
- 1 big red onion
- 200 g salad cucumber
Sauce:
- 3 tablespoons of sunflower oil
- 1 teaspoon of salt
- 1,5 tablespoons of French mustard
- 2 tablespoons of lemon juice
How to make cabbage salad.
Clean the cabbage, shred or chop finely. Wash the tomatoes, remove the seeds and drain off any juice. Afterwards, cut it into small cubes. Slice the cucumber and the red onion very thinly. Place all the vegetables in a bowl.
Combine salt, oil, lemon juice and mustard in a cup. Pour the sauce over the vegetables in the bowl and mix gently.

Good to know when making cabbage salad.
It is best to pour the sauce over the vegetables 10 minutes before serving.
The tomatoes weighed 300 g after I removed the seeds and drained their juice.
I cut both the cabbage and the cucumber by using a slicer.
