Do you like fish salads? If so, you will surely like this herring salad that I recently made with homemade mayonnaise.
I have combined vegetables such as carrot, onion, potato and beetroot with soft, aromatic herring. I seasoned the salad with homemade mayonnaise.

Ingredients for herring salad with homemade mayonnaise.
- 350 g herring fillets in oil brine
- 300 g cooked beetroots
- 5 hard-boiled eggs
- 150 g cooked carrots
- 200 g cooked potatoes
- 2 medium-sized red onions
- 2 tablespoons of apple cider vinegar
- 1 teaspoon of lemon juice
- 1 teaspoon of Dijon mustard
- black pepper to taste
- 6 tablespoons of mayonnaise
- 4 tablespoons of sour cream
- a pinch of salt
How to make herring salad with homemade mayonnaise.
Boil all the vegetables unpeeled. When soft, pour out the water, cool them and peel them. Afterwards grate them on a large mesh grater.
Hard-boil the eggs. This should take 9 minutes. When cooked, peel them off and grate on a large-mesh grater.
Peel the red onion and cut it into very small cubes. Put the chopped onion in a bowl, add the apple cider vinegar to it and stir. Let it rest for 20 minutes.
Mix mayonnaise with cream, lemon juice, a pinch of salt, pepper and mustard.
Cut the herring into small pieces.
Arrange the vegetables, herring and mayonnaise sauce in layers in a bowl. Start by putting half of the potatoes on the bottom, then half of the carrots, half of the beetroots, herring, mayonnaise sauce, onion, then the remining potatoes, carrots and beetroots. I put some grated eggs on top.
The finished salad must be cooled in the refrigerator.
Good to know when making herring salad with homemade mayonnaise.

I used herring in oil brine. Personally, I do not like herring in vinegar or salt, so I did not choose those versions.
You can replace the red onion with white onion or shallots.
I prepared this salad in a layered form. You can also combine all the ingredients instead of stacking them in layers.
