In stores, you can also find ready-made herring dishes with various sauces or a range of different additions. My favourites include herring in oil and this is the herring I reach for most often. I like to eat it on its own without any additions, or use it as a base for salads, and rolls or combine it with additions such as onion, cranberries, tomato sauce and many others.

Herring in mustard sauce is one of those fish dishes in which I use marinated herring in oil. Preparing this herring is not only quick but also very easy. You can make it just before your guests arrive and eat it almost immediately. In addition to fish, I also add vegetables, which, in this case, are onions, and I combine the whole thing with a sauce based on grainy mustard, mayonnaise, and sour cream. Ingredients for herring in mustard sauce.

  • 400 g herring filets in oil
  • 150 g onion
  • 500 ml boiling water
  • 1/4 teaspoon of black pepper
  • 1 tablespoon of honey
  • 1 tablespoon of lemon juice
  • 4 tablespoons of mayonnaise
  • 2,5 tablespoons of grainy mustard
  • 1/2 teaspoon of turmeric
  • 2 tablespoons of sour cream

How to make herring in mustard sauce.

Cut the peeled onion lengthwise in half, then cut each half into thin slices or strips. Put the sliced ​​onion in a bowl, pour boiling water over it and leave it to stand for 5 minutes. Next, pour it into a colander and leave for a while to drain out the water and cool down the onion. Wipe the excess oil with a paper towel and cut each herring into 2.5-3 centimetre wide pieces. Put the mayonnaise, mustard, pepper, turmeric, lemon juice, honey, and sour cream in a larger bowl and mix using a hand whisk. Put the onion and sliced ​​herring into the mustard sauce and mix gently. Keep the herring in the refrigerator before serving.

In this recipe, I use liquid floral honey.
