Lemon curd

Lemon curd is a thick cream with the consistency of a custard. It is made from lemons, sugar, plenty of egg yolks and butter. The cream has its sour taste to the use of both lemon juice and lemon peel. Lemon curd is used as an addition to pancakes, cakes, desserts in a cup, tarts, toasts and muffins.

The preparation of lemon cream requires only a few minutes of work. Depending on whether the cream is cooked directly on the heat or in a water bath, the entire process may take up to 15 minutes. When prepared in a water bath, the cream has a lighter consistency, similar to that of Hollandaise sauce, while the one cooked directly over a heat is definitely denser and more compact.

Ingredients for lemon curd.

  • 100 g unsalted butter
  • 200 g egg yolks (around 10 egg yolks)
  • 250 g crystal sugar
  • 200 g lemon juice
  • a pinch of salt
  • zest of 2 lemons

How to make lemon curd.

Pour crystal sugar, a pinch of salt, juice and lemon zest into a pot. Bring it to a boil. Using a whisk, whisk the egg yolks in a bowl – it should take about 2-3 minutes. Pour the boiling juice from the pot into the whisked yolks, while stirring constantly. Then, pour the whole liquid into the pot, put it back on the heat and stirring constantly, bring it to a boil. Simmer for 3-4 minutes. At the end of cooking, add the diced butter, mix it in and remove the curd from the heat. Next, pour the cream through a dense sieve while still hot. Cover the cream with cling film and set aside to cool down.

Good to know when making lemon curd.

The lemons from which the peel is rubbed should be soaked for a few seconds in boiling water, then brushed with a brush and dried. When rubbing the skin, be careful not to rub the white layer under the yellow skin. It has a bitter taste and will give the cream bitterness. The lemons I used were grated on the medium mesh of a grater.

For the preparation of lemon cream, use freshly squeezed lemon juice. About three large lemons will give the amount of juice you need.
