Muffins are sweet, cupcake-shaped cookies. Muffin batter is made from flour, eggs, sugar, dairy products and fat, and you can add nuts, chocolate or fruits to it. There are many possible combinations, it’s really all up to the moment, your preference and the season. During the spring and summer, I usually choose fresh fruits. Muffins with strawberries, cherries, raspberries and blueberries are very popular in my home. I often combine these fruits with both white and milk chocolate. Off-season, I make chocolate, banana and pumpkin muffins.
Today I have a recipe for strawberry muffins with white chocolate. The combination of strawberries and white chocolate works every single time, these two ingredients blend together perfectly. A simple recipe for strawberry muffins can be found below. I hope you will bake them at home.
Ingredients for strawberry and white chocolate muffins.
- 2 eggs size “M”
- 300 g all-purpose flour
- 240 g natural yoghurt
- 50 g white chocolate
- 200 g strawberries
- 150 g icing sugar
- 1 teaspoon of baking powder
- 1/2 teaspoon of soda bicarbonate
- zest of 1/2 lemon
- 100 ml sunflower oil
How to make strawberry and white chocolate muffins.
Wash and dry the strawberries, and cut them into small pieces.
Put the eggs and icing sugar into a bowl, then whisk for 4-5 minutes until the eggs are fluffy. Gradually pour in the oil, then add the yoghurt while continuing to whisk. At the end, add the lemon zest, flour sifted with baking powder and baking soda – do not add all the flour at once, but in smaller batches. Add chopped strawberries and white chocolate pieces to the muffin batter.
Line a metal muffin tray with paper muffins cups, then fill each one with the batter. Preheat the oven to 190 degrees Celsius and when it is hot, place in the muffin tray. Bake the muffins for about 30 minutes. After that, remove the baked muffins out of the oven and let them cool down before serving. You can serve the muffins sprinkled with icing sugar.
