Today I have for you a recipe for a quick dinner dish. It will probably come as no surprise that this quick dinner is based on pasta. The recipe I share below is a recipe for broccoli pasta, a vegetarian dish without a gram of meat. I prepared pasta with broccoli using maccheroni pasta, i.e. pasta in the shape of narrow tubes. This pasta works great in dishes that have some sauce in them, and it is also a good addition to soups and stir-fries. I combined the cooked pasta with a broccoli cream sauce, pesto and garlic. On top, I sprinkle the whole dish with freshly grated Parmesan cheese. Pasta with broccoli is a dish that can be served both for dinner and lunch. I hope you like it.

Ingredients for broccoli pasta.

  • 200 g maccheroni pasta
  • 2 teaspoon of salt
  • 200 ml cream (30%)
  • 1/2 teaspoon of freshly ground pepper
  • 300 g broccoli florets
  • 2 tablespoons of green pesto
  • 3 tablespoons of olive oil
  • 2 big cloves of garlic
  • 50 g grated Parmesan
  • 1 tablespoon of all-purpose flour
  • 200 ml vegetable broth

How to make broccoli pasta.

Boil the pasta in water salted with 1 teaspoon of salt. When cooked, pour into a colander, pour cold water over it and leave to drain for a while.

Pour water into a pot, add 1/2 teaspoon of salt and bring it to a boil. When the water in the pot starts boiling, put the broccoli florets in, bring it back to a boil and cook over a medium heat for 6-7 minutes. Pour the cooked broccoli florets into a colander and drain the water. Then, finely chop half of the florets with a knife.

Pour olive oil into a frying pan, add the mashed garlic and cook for a few seconds. Then add the pesto, 1/2 teaspoon salt, pepper, flour mixed with cream and broth, broccoli florets and chopped broccoli. Cook over a medium heat for 4-5 minutes, stirring occasionally. Add the pasta to the finished sauce and mix thoroughly. Serve the broccoli pasta sprinkled with grated Parmesan cheese.

Good to know when making broccoli pasta.

The pasta should be cooked according to the instructions on its package. The instructions on the packaging of my pasta suggested 7 minutes, but I cooked it for just over 10 minutes. It is worth checking from time to time whether the pasta is cooked or not and extend the cooking time if necessary.

Maccheroni is a type of pasta that I recommend for this dish, but you can replace it with another type of pasta. Penne, farfalle, coquillette or fusilli will all work equally well in this dish.

You can replace the green pesto with homemade pesto. It can be radish leaves pesto, carrot greens pesto, wild garlic pesto.
