The following salad is probably the third potato salad on my blog. Like the other two, this salad is also simple and can be made from regular ingredients. The basis of this salad are boiled potatoes and sardine fish, which I usually buy in a can. I also added pickled capers and green onions, which blend in nicely with the other ingredients. This potato salad with sardines can be served at family gatherings and is perfect as a snack or served for lunch. Ingredients for potato salad with sardines.
- 500 g potatoes
- 1 and 1/4 teaspoon of salt
- 2 big green onions
- 2 tablespoons of capers
- 90 g sardines in oil brine
- 3 tablespoons of sour cream
- 1/4 teaspoon of black pepper
- 2 tablespoons of mayonnaise
- 1 tablespoon of lemon juice
How to make potato salad with sardines.
Place the potatoes in a pot, pour water over them, add a teaspoon of salt and bring it to a boil. Boil the potatoes until they are soft, then drain the water and let the potatoes cool down.
Pour off the oil from the sardines, then divide the fish into smaller pieces with your fingers.
Put the cooled down potatoes into a bowl and add finely chopped green onions, capers and sardines. Combine mayonnaise, 1/4 teaspoon of salt, pepper, lemon juice and sour cream in a cup. Pour the sauce from the cup into the ingredients in the bowl and mix thoroughly.

Good to know when making potato salad with sardines.
In this salad, I used small pieces of potatoes, which I didn’t peel before or after boiling. I cut each larger potato in half and left the small ones remain as a whole. New potatoes will be best in this salad, but those are not available all year round. The boiling time of the potatoes depends on whether you are cooking young, small pieces or slightly older ones. I boiled the potatoes for a little over 20 minutes.
