Tuna pasta
Lots of stores do World Cuisine Products Week from time to time. It is usually an assortment of one selected country at a time. Personally, I love such weeks, because I can often buy unique products. Recently, during an Italian week, I managed to buy armoniche pasta. I had not had any previous experience with this type of pasta, but it turned out to be a very successful purchase. Armoniche is a large pasta that resembles folded semi-circular frills. This pasta is made of hard durum wheat and, when cooked, it works perfectly with sauces. I decided to serve this pasta with tuna, tomatoes and green olives
To prepare the tuna pasta, I used canned tuna, which I first poured from the brine, then fried in olive oil. I added chopped green olives, tomatoes, onion, garlic and parsley to the tuna. The tuna sauce came out creamy thanks to the addition of olive oil. I served the tuna pasta for dinner, sprinkled with parsley, and I also sprinkled it with grated Parmesan cheese. Ingredients for tuna pasta.
- 300 g armoniche pasta
- 1 and 1/4 teaspoon of salt
- 100 g onion
- 2 big cloves of garlic
- 1/2 teaspoon of black pepper
- 185 g tuna in oil brine
- 1 chopped parsley
- 5 tablespoons of olive oil
- 200 g cocktail tomatoes
- 80 g green olives
- 1/2 teaspoon of dried oregano
How to make tuna pasta.
Boil the pasta in water salted with a teaspoon of salt. Pour the cooked pasta into a colander and pour cold water over it. Set it aside for a moment to drain, then transfer it to a bowl.
Pour olive oil into a frying pan and add finely chopped onion. Fry over a medium heat for 5 minutes, then add mashed garlic and continue frying for a few seconds. After that, add the drained tuna, chopped tomatoes and olives, 1/4 teaspoon salt, oregano and pepper. Continue frying for about 8 minutes over medium-high heat, and when done, put the sauce into a bowl. Add previously cooked pasta, mix and sprinkle with parsley.

Good to know when making tuna pasta.
I cut each cherry tomato in half and sliced the olives.
I cooked the pasta for 15 minutes from the moment the water with the pasta started to boil. It is best to cook the pasta according to the instructions on its packaging.
Of course, you can replace armoniche pasta with any type of pasta: fusilli, penne or even pappardelle will work well for this dish.
