Green lentil sandwich spread
This simple sandwich spread made from green lentils, sun-dried tomatoes, herbs and spices is a spread you must try. It tastes fantastic on fresh bread, served for breakfast, dinner or as a snack. Preparing this lentil sandwich spread is extremely quick and easy. As it is based on canned lentils, there is no need to cook anything. The lentils should be drained from the brine, put in a blender and combined with the other ingredients by mixing.

Ingredients for green lentil sandwich spread.
- 300 g canned green lentil
- 1/2 pickled green peppercorns
- a small bunch of parsley
- 50 g sun-dried tomatoes in olive brine
- 1 big clove of garlic
- 1 tablespoon of lemon juice
- 1/4 teaspoon of salt
- 2 tablespoons of olive oil

How to make green lentil sandwich spread.
Pour the canned green lentils into a sieve or colander, drain them from the brine then transfer them to a blender. Add the chopped sun-dried tomatoes, chopped parsley, pickled green peppercorns, salt, lemon juice, mashed garlic and olive oil. Blend until you get a creamy, fairly uniform consistency. Transfer the green lentil spread to a container or bowl, cover and place in the fridge. Serve as an addition to bread.

Good to know when making green lentil sandwich spread.
I poured the green lentils from the brine into a sieve, I did not rinse them in water.
The olive oil can be replaced with the oil in which the sun-dried tomatoes are marinated. I use this sun-dried tomato oil brine often when making this lentil sandwich spread.
The pickled green peppercorns cannot be replaced with ground pepper. It is marinated peppercorns that give this spread a unique taste.
