Broccoli is a vegetable from the cabbage family, as is cauliflower. In my kitchen, I mostly use broccoli for making soups. From time to time, I also add it as an addition to various dinner dishes. When I do so, it is either boiled in water or baked in the oven.
Broccoli soup made only with broccoli tastes bland. Therefore, in order to get an intense and a nice flavour to this vegetable, other ingredients should be added. Undoubtedly, one of the best options is cheese. You can choose between feta, cheddar or blue cheese. I placed bet on the last one. It has a very intense flavour, so it is worth combining it with vegetables, which taste quite common.
Ingredients for broccoli and Stilton soup.
- 1 big broccoli
- 100 g Stilton cheese
- 1,5 l water
- 1 big potato
- 1 tablespoon of salt
- 100 ml soup cream
How to make broccoli and Stilton soup.
Wash the broccoli, divide it into florets and put it into a pot. Pour in water and add peeled and diced potatoes. Bring it to boil and simmer for 25 minutes. After that, add salt, crushed Stilton cheese and cream. Bring it to boil again and once it starts to boil, take it off from the heat and blend it.
Serve the soup with bread, egg, rice or croutons.

I made the soup on water. If you want the soup to have a more intense flavour, replace the water with vegetable broth.
