Baked young cabbage
Young cabbage baked with caraway and chilli is an exceptionally simple and quick dish, perfect for a light dinner or lunch. This baked cabbage works great both as a stand-alone vegetarian dish and as an addition to meat, fish or groats.
I serve the cabbage with an aromatic yoghurt sauce with garlic and lemon, which gives the dish freshness and lightness, and the grated parmesan and chopped dill add distinctiveness and flavour. This dish is perfect for a quick dinner when you don’t have time for long cooking – just cut the cabbage, season it and put it in the oven. While baking, the cabbage should be turned over once, but it is quite quick.

Ingredients for baked young cabbage.
- a small head of young cabbage (530 g)
- 1/2 teaspoon of chilli flakes
- 1/2 teaspoon of salt
- 2 tablespoons of olive oil
- 3/4 teaspoon of ground caraway
- 250 g natural yoghurt
- clove of garlic
- 1 tablespoon of lemon juice
To serve:
- freshly-chopped dill
- 50 g grated parmesan cheese

How to make baked young cabbage.
Cut the cleaned, washed and dried young cabbage into 8 pieces. Place the cabbage pieces on a baking sheet lined with baking paper, brush with olive oil on both sides, sprinkle with salt, ground caraway and chilli flakes. Bake in an oven preheated to 180 degrees Celsius for about 45 minutes, flipping after 20 minutes.
In the meantime, prepare the garlic sauce based on natural yoghurt by mixing it with mashed garlic and lemon juice.
Pour yoghurt over the ready, golden and slightly crispy cabbage, sprinkle with grated parmesan and fresh dill. This aromatic, quick and healthy oven dish tastes best fresh – also ideal as an addition to dinner dishes in a fit version. In this version, you can skip adding cheese and serve the cabbage only with the yoghurt sauce.
