Casserole is a great idea to combine vegetables with meat and sauce. In a casserole, you can use practically everything that you have in the fridge. Often those can be leftover food such as meat, vegetables, dairy products, fish. At home, I make both vegetarian and meaty casseroles – in the latter, I mix the veg with meat, fish or seafood. Vegetable casseroles are perfect as a main course and are also a fantastic addition to other dishes. Casseroles with meat or fish work best as a main dinner dish.
Today’s recipe is for casserole with potatoes, onions, tomatoes, ham and béchamel sauce. This casserole is very simple and you do not need any sophisticated ingredients to prepare it. The casserole should be served warm, a few minutes after baking.

Ingredients for vegetable casserole with ham.
- 150 g ham (in slices or a piece)
- 50 g butter
- 1,5 tablespoon of flour
- 400 ml milk
- 1 and 1/4 teaspoon of salt
- a pinch of black pepper
- 500 g potatoes
- 1 big tomato
- 1 medium sized white onion
- a small bunch of parsley
How to make vegetable casserole with ham.
Peel the potatoes, cut them into 4-5 millimetres thick slices, put them in a pot, pour water in it and add a teaspoon of salt. Bring it to boil, then simmer for 15 minutes. Drain the water from the pre-cooked potatoes and place the potato slices side by side in an ovenproof baking dish.
Peel the onion and cut into thin feathers. Wash the tomato, dry it and dice it or cut it into smaller pieces. Cut the ham into small cubes or strips. Finely chop the parsley.
Put butter and flour into a pot. Stirring constantly, fry over a medium heat for two minutes. After that, start adding milk in small strings, stirring constantly. Bring the béchamel sauce to boil, season with with 1/4 teaspoon of salt, add pepper and cook for a minute.
Put the onion, tomato and ham onto the potato slices arranged in a heatproof dish. Sprinkle with chopped parsley and pour béchamel sauce over it. Cover the dish with aluminium foil or a lid and put it in an oven preheated to 185 degrees Celsius for 20 minutes. After that, carefully remove the foil and continue baking for another 15-20 minutes. After removing from the oven, let the casserole stand for 5 minutes before serving.

Good to know when making vegetable casserole with ham.
The baking dish I used was heat-resistant and had dimensions of 24 by 17 centimetres.
The potato slices must be pre-cooked before adding them to the casserole. If the potatoes are not pre-cooked, the casserole will need much more time in the oven to bake.
Any type of cooked or smoked ham can be used in the casserole. The ham can be sliced and cut into strips or diced.
