Pizza from a baking pan
Homemade pizza from a baking pan with mozzarella cheese, ham and mushroom is a tasty dish from the oven, which is great when served for lunch and also as a snack. This pizza can, of course, be made with your favourite toppings. In this recipe, I opt for a simple version, i.e. a combination of ham and mushroom. I start preparing homemade pizza by making the dough, which is based on type 00 wheat flour.
This flour is ideal for pizza because, thanks to its very fine structure and high gluten content, it absorbs water quickly. Pizza dough made with this flour absorbs less water, which gives the pizza a crispier crust once baked. I combine this flour with olive oil, lukewarm water, salt, sugar and instant yeast. After kneading the dough, I leave it to rise, and when it is ready, I spread it on a baking sheet and add canned tomatoes and the toppings. Ingredients for pizza from a baking pan.
- 250 g flour type 00
- 3 g instant yeast
- 140 g lukewarm water
- 1/2 flat teaspoon of salt
- 2 tablespoons of olive oil
- 1/2 teaspoon of crystal sugar
Additionally:
- 150 g ham
- 180 g grated mozzarella
- 200 g canned tomatoes
- 150 g canned mushrooms

How to make pizza from a baking pan.
Pour sifted flour into a bowl, add instant yeast, salt, sugar, a spoonful of olive oil and lukewarm water. First, mix with a wooden spoon, and when the ingredients start to combine, knead them with your hand. Knead the dough for 5 minutes, first in a bowl and then on the kitchen counter.
Pour a spoonful of olive oil over the kneaded dough, then grease the edges of the bowl with olive oil then cover the bowl with the dough with cling film and place a kitchen towel on top. Leave the bowl with the dough to rise for about an hour or until it doubles in size. Place the risen dough on a baking sheet lined with baking paper, spread evenly, then spread with canned tomatoes and sprinkle with grated mozzarella. Place canned mushrooms on the cheese and place large slices of ham on top of it. Leave the pizza to rise for 30 minutes. Bake the risen pizza for 22-25 minutes in an oven preheated to 200 degrees Celsius.

Good to know when making pizza from a baking pan.
The canned tomatoes I use in this recipe are finely chopped tomatoes with added herbs.
Before placing the mushrooms on the pizza, they should be drained of the brine they are in. Additionally, after draining the mushrooms, they should be squeezed of any excess brine.
Bake the pizza in a 26 by 36 centimetre baking pan.
