Pizza Bianca with zucchini
White pizza or pizza Bianca, just like pizza with tomato sauce, is very popular in my house. I make it as often as traditional pizza with tomato sauce. The dough for white pizza is identical to the one for pizza with sauce, the difference between these two pizzas is in the sauce. In white pizzas, the tomato sauce is replaced by sour cream, mascarpone, béchamel, ricotta or cream cheese. Mozzarella cheese and all other toppings on white pizza are identical to those that can be found on traditional pizza. There are several ingredient combinations that work great on white pizza. These include combinations such as mushrooms and ham, ricotta and spinach, or Parma ham and arugula.
To prepare pizza Bianca, I start by making the dough. Depending on how much time I have, I make either a quick dough or a long-rising one. Good pizza dough is more than half the success, because the type of dough determines whether the pizza tastes good or not. After baking, the perfect pizza dough should be fluffy, light and well risen. The dough that I used as the base for this pizza is a long-rising dough. After kneading, rising and waiting the appropriate time, I formed the dough into a round shape and covered it with cream cheese, mozzarella and zucchini. I cut the zucchini into thin ribbons, which not only gave a nice visual effect but also allowed the zucchini to bake quickly and not cover the dough with excess juice.
I baked the pizza at a high temperature, exactly 230 degrees Celsius. After removing it from the oven, I set it aside for a moment, then cut it and served it while it was still hot. Make the pizza dough with THIS recipe.
- 100 g zucchini ribbons
- 150 g cream cheese
- a pinch of freshly ground black pepper
- a pinch of salt
- 1 tablespoon of olive oil
- 1 small clove of garlic
- 1/2 teaspoon of chopped rosemary
- 150 g grated mozzarella

How to make pizza Bianca with zucchini.
Mix the cream cheese with mashed garlic and chopped rosemary leaves in a cup.
Form the pizza dough on a baking paper into a round shape and cover it thoroughly with the cheese mix from the cup, leaving about one centimetre empty around the edges. Next, sprinkle with coarsely grated mozzarella cheese, place thin slices of zucchini on it, sprinkle with pepper and salt and drizzle with olive oil. Set the pizza aside for 15 minutes to allow the dough to rise.
Preheat the oven to 230 degrees Celsius and when hot, add the white pizza. Bake for 16-18 minutes. Remove the baked pizza from the oven, set it aside for 2 minutes, then cut it with a pizza cutter.
