Pierogi is a dish that needs no introduction. I will only mention that pierogi dumplings are made from flour and water, then filled with a sweet or savoury filling. You can use a variety of products as fillings – fruits, vegetables, meat and dairy products all work great in these dumplings.

Today, I want to share with you a very easy recipe for sweet cheese pierogi dumplings. You will find the basic recipe for dumplings dough on the blog. I made the dough with that recipe and filled it with white quark cheese filling. The finished pierogis were served with melted butter.

Ingredients for sweet pierogi dumplings.

  • 1 kg creamy quark cheese
  • 2 eggs
  • 2 tablespoons of vanilla pudding powder
  • 8 tablespoons of crystal sugar

Additionally:

  • unsalted butter
  • 1 teaspoon of salt for boiling the pierogis

How to make pierogi dumplings with sweet cheese.

Put the quark cheese, eggs, sugar and pudding powder into a bowl. Rub very thoroughly to obtain a homogeneous cheese mixture.

Prepare the dough for dumplings according to the recipe in the link above. Roll out the dough very thinly, to a thickness of about one millimetre. Then, using a glass or a metal ring, cut out circles from the pastry to be then filled with cheese mixture. Place one spoon of cheese filling in the middle of each pastry circle. Next, fold each circle in half so that the filling is inside. Carefully stick the pastry together around the filling, making sure that the filling does not come out from the dumpling. Place the dumplings on a cloth lightly dusted with flour.

Pour water into a large pot, add a tablespoon of salt and bring to boil. When the water starts boiling, reduce the heat to medium, then carefully add in the dumplings. Only cook a portion of the dumplings at a time. Bring the water and the dumplings to boil and, once the dumplings start floating to the surface of the water, cook them over a low heat for 3 to 4 minutes. Put the cooked dumplings in a colander and pour cold water over them. Set aside for a moment to drain. Melt the butter in a microwave or in a small pot and pour it over the warm dumplings.

Good to know when making sweet dumplings with quark cheese.

Work on one part of the dough at a time, do not roll the entire dough at once, because it will dry out and it will be difficult for you to stick the pastry together.

I cut out circles with a diameter of 7 centimetres. I put a spoonful of the filling on each circle. In total, I got 80 pierogis.

You can also freeze the ready-made dumplings. Before freezing, the dumplings should be part-boiled. I usually put dumplings in boiling water for a minute. Then I take them out on a plate, let them cool down completely then place them in plastic containers. If I have more than one layer of dumplings in a container, I separate them with cling film. Once taken out from the freezer, these dumplings should be put on boiling water frozen and cooked for about 3 minutes from the moment they rise to the surface of the water.
