Summer squash baked with cheese
Summer squash is not a very popular vegetable these days. I may be wrong, but only a handful of people use it in the kitchen.
My mother used to marinate summer squash in vinegar when I was still a child. In the winter period it served as a delicious addition to many dishes.
I found a great specimen of summer squash in the garden today and decided to bake it in the oven.
It turned out to be great. I served it for dinner with toasted baguette.

Ingredients for baked summer squash.
- 1 medium size summer squash
- 100 g of brie cheese
- 2 garlic cloves
- 1/3 teaspoon of chopped chili pepper
- 5 branches of thyme
- 3 tablespoons of a chosen type of cheese e.g. cheddar
Vegetarians should choose a type of cheese that goes with their diet, i.e. without animal-based rennet.
How to prepare summer squash baked with cheese.
Wash the squash, remove the seeds. Bake in the oven for 40 minutes at 180 Celsius degrees.
Mix the grated cheese, brie cheese, minced garlic, chili and thyme in a bowl.
After 40 minutes remove the summer squash from the oven. Fill its middle with the cheese mixture. Continue baking for another 20 minutes. Serve with crackers or as an addition to other dishes.

Good to know when making baked summer squash.
You can also add 50 ml of white wine to the cheese filling. It is up to your taste.
