Mini pizzas made from puff pastry are a great idea for a quick snack. Using puff pastry saves time which you would normally spend on waiting for the regular pizza dough to rise. All you need to do with the puff pastry is to remove it from the refrigerator, carve out the desired shapes out of it and fill it with your favourite filling. In this recipe, I focus on store-bought pastry, so the preparation of these puff pastry pizza snacks is extremely quick. You may be tempted to use homemade puff pastry, but in this case you have to make it beforehand or use frozen one.

The puff pastry pizza filling consists of cheese, mushrooms and sun-dried tomatoes. It is so tasty that when I was placing it on my pizzas I couldn’t stop munching it. Ingredients for puff pastry pizza snacks.

  • 250 g mushrooms
  • 1 tablespoon of oil
  • 50 g sun-dried tomatoes in olive brine
  • 100 g mascarpone cheese
  • a pinch of pepper
  • 1/4 teaspoon of salt
  • 50 g grated Parmesan cheese
  • 270 g puff pastry (a packet)
  • 1 egg
  • 1,5 teaspoon of dry oregano

How to make puff pastry pizza snacks.

Clean the mushrooms, cut them into slices and put them in a frying pan. Add the oil and fry over a medium heat for about 8 minutes, stirring occasionally. Allow the fried mushrooms to cool down.

Cut the sun-dried tomatoes into thin strips, put them in a bowl and add the cold mushrooms, mascarpone, a pinch of pepper, salt and Parmesan cheese. Mix it thoroughly.

Cut out circles with a diameter of 7 centimetres from the puff pastry. Brush each circle with an egg, then place about 1.5 teaspoons of the filling in the center of each one and sprinkle them with a little oregano. Preheat the oven to 200 degrees Celsius and when it is hot put, put the puff pastry pizzas in. Bake the pizzas for 20 minutes. After baking, remove them from the oven and cool them down a little before serving.

Good to know when making puff pastry pizza snacks.

You can replace the dry oregano with other herbs such as thyme, herbs de Provence or basil.

The filling should not be spread over the entire pizzas, but only placed in their center. During baking, the cheese will melt a little and it will covering the entire pizzas.

The filling for the pizzas can be prepared in advance and kept in the refrigerator for 2-3 days before using it.

The puff pastry should be cold when cutting out circles out of it and placing the filling. It is best to remove it from of the fridge only when the filling is ready and you start forming the pizzas.
