Pork roulades with ham, onion and feta cheese
Meat roulades are always a good way to diversify boring meat dishes. They can be made from both beef and pork and filled with any type of filling. These roulades are based on pork, specifically on pork loin, which should be thinly flattened with a meat mallet, then a slice of ham and fried onion and feta cheese stuffing should be placed on it. After folding into an oval shape, the roulades should be coated in flour, egg and finally in breadcrumbs. At the end they would be fried until golden brown in a large amount of oil.

Ingredients for pork roulades with ham, onion and feta cheese.
Stuffing:
- 150 g onion
- 1 tablespoon of oil
- 100 g feta cheese
- 1/4 teaspoon of black pepper
- 1/2teaspoon of herbs de Provence
Additionally:
- 4 boneless pork loin slices
- 4 big slices of ham
- 2 eggs
- 2 tablespoons of all-purpose flour
- 6-7 tablespoons of breadcrumbs
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- oil for frying

How to make pork roulades with ham, onion and feta cheese.
Slice the peeled onion into small cubes. Pour oil into a pot and add the onion, Provencal herbs, black pepper then fry on low heat for 10 minutes, stirring occasionally. Cool down the fried onion and when cold combine it with feta cheese.
Flatten each slice of pork loin thinly with a meat mallet. First, place the meat on a cutting board, cover it with cling film and beat with a mallet, first on one side, then turn it over and continue beating on the other side. Sprinkle the meat with salt and black pepper on one side, then turn it over and place a slice of ham on one end of the meat as well as put some of the onion and feta cheese stuffing on it. Fold the sides of the meat towards the center and roll it up.
Put the eggs in a bowl and beat them with a fork. Next, pour the flour into the second bowl and the breadcrumbs into the third one. Coat the meat first in the flour, then in the egg bath and finally in the breadcrumbs. Pour a large amount of oil into a thick-bottomed frying pan, heat it well and when hot, place the roulades on it. Fry the meat on medium heat, tending to low, until golden brown on all sides – about 20 minutes all-together. Put the fried meat on a plate.

The total weight of the pork loins is 650 g. Each slice of meat before flattening must be quite thick, about 1.5-2 centimetres. Each slice of ham must also be quite large, about 16 by 10 cm. You can use cooked ham as well as smoked ham. From the given amount of ingredients you will obtain 4 roulades.
These meat roulades can be served for dinner or each one can be cut into smaller slices and served as a snack.
In this recipe I use yellow onion, but you can replace it with red onion, sugar onion or shallot.
