Baked beans in Polish style
Baked beans is a dish that probably needs no introduction. The basic ingredient of this dish are beans, which are combined with tomato sauce, sausage, bacon, onion, seasoned with garlic and marjoram. This dish can be made all year round, as the ingredients used in it are generally available. During the season of tomatoes, it might be worth replacing the canned tomatoes with fresh ones, while during the off-season canned ones are just right.
To prepare baked beans, start by soaking the beans. Depending on the type of beans you choose and how large the beans are, it may take more or less time to soak them. Usually, like most of us, I pour cold water over the beans in the evening and leave it to soak overnight. By the time I start cooking in the morning or during the day, the beans are already properly soaked.
When it comes to meat additions, for me it is usually both bacon and sausage. If you prefer, you can add only the bacon or just the sausage, it is not necessary to add both. The bacon that I add most often is steamed bacon, but smoked bacon works just as well in this dish.

Ingredients for baked beans in Polish style.
- 500 g dried, white beans
- 300 g bacon
- 250 g onion
- 450 g Polish sausage
- 3 bay leaves
- 4 allspice berries
- 1 and 1/4 teaspoon of salt
- 1 teaspoon of marjoram
- 1/4 teaspoon of black pepper
- 1 teaspoon of sweet ground paprika
- 1/2 teaspoon of spicy ground paprika
- 4 cloves of garlic
- 1 l tomato paste or canned tomatoes
- 1 l water
How to make baked beans in Polish style.
Put dried beans into a bowl, pour cold water and soak them for at least 10 hours.
Put the diced sausage and bacon in a frying pan, fry them over a medium heat for 10 minutes. Next, add the chopped onion and mashed garlic. Continue frying, this time over a low heat for 15 minutes.
Put the soaked beans, water, bay leaf and allspice into a large pot. Bring it to a boil then cook covered for about an hour or until the beans start to soften. At that point, add the fried sausage with the bacon and onion, canned tomatoes, sweet and hot paprika, salt, pepper and marjoram. Cover the pot with the lid slightly open and cook the ingredients on a low heat for 30 minutes. Serve the cooked baked beans with bread

Good to know when making baked beans in Polish style.
You can use any type of beans to prepare these baked beans. I used medium-sized white beans.
The cooking time depends on the size of the beans. I suggest checking from time to time if the beans are soft enough or if they need more time on the fire.
You can replace the dried beans with canned ones, which do not require much cooking and personally, I would not cook them with the remaining ingredients for longer than 10 minutes.
