Dishes made from chicken breast are usually fast and easy to prepare. I like baked, fried, coated or stuffed chicken. This time, I went for chicken breast coated in Parmesan cheese and breadcrumbs. Adding the cheese to the coating significantly changed the taste of chicken. I served the dish with groats and carrots mixed with peas.

Ingredients for chicken breast in Parmesan coating.

  • 3 big chicken breasts
  • 3 eggs
  • 1 and 1/2 teaspoon of salt
  • 1/6 teaspoon of black pepper
  • 1/2 cup of grated Parmesan cheese
  • 5 tablespoons of all-purpose flour
  • 3/4 cup of breadcrumbs
  • sunflower oil for frying

How to make chicken breast in Parmesan coating.

Wash the chicken breasts, dry them with a paper towel, clean and cut them into three-centimetre-wide strips. Season the meat with salt and sprinkle with black pepper.

Crack the eggs into a bowl and beat them with a fork.

Pour flour on one plate and breadcrumbs mixed with grated Parmesan cheese on the other.

Cover the chicken first in the flour, then in egg bath and finally in the breadcrumbs and cheese mixture.

Heat up the oil in a frying pan and once hot, reduce the temperature to medium. Line up the coated chicken breast pieces on the oil and fry them on both sides until golden brown. Place the fried chicken on a paper towel to drain the excess grease.

Serve the fried chicken by itself or with potatoes, groats, rice, bread or salad.

Good to know when making chicken in Parmesan coating.

Once cut, the chicken pieces can be gently flattened with a meat pestle. I didn’t do it because I preferred my chicken to be juicier.

I bought the Parmesan cheese in one piece and grated it on a medium-sized grater by myself.

Use a non-sticky pan for frying the meat. Such a pan is the safest option, as once the cheese starts melting during the baking, it may stick to the bottom of a regular pan.
