A light chicken salad with sweet and juicy melon is a great way of combining fruits with meat. This salad is perfect as an appetiser or as lunch. It is very easy to prepare and does not require too many ingredients.
Ingredients for chicken salad.
- 500 g chicken breast
- 500 g melon (I used Galia)
- 100 g ruccola salad
- 1 teaspoon of salt
- a pinch of salt
- a pinch of pepper
- 4 tablespoons of lemon juice
- 3 tablespoons of honey (I used flour honey)
- 2 tablespoons of olive oil
How to make chicken and melon salad.
Pour a teaspoon of salt into a pot, add chicken breast and cover it with water. Bring it to boil and cook for 25 minutes or until the meat is tender. Let it cool down once cooked, then cut it into thin slices.
Peel the melon, remove the seeds and cut it into cubes or carve out little balls from it with a fruit spoon.
Combine olive oil with lemon juice, honey, salt and pepper in a cup.
Arrange the ruccola salad, chicken slices and melon balls on a serving platter. Drizzle it with the sauce from the cup.

The melon used for the salad should be ripe. Such a melon is very sweet and juicy and it adds more taste to the salad.
The chicken can be replaced with turkey or, if you prefer a meatless version, with tofu cheese.
