Chicken in lemon sauce
Juicy chicken in lemon sauce with butter and herbs is a dish that is perfect for dinner. Very often, chicken breast is dry after boiling or frying. The addition of lemon juice and butter makes the poultry juicy after frying, and additionally gives it a slightly herbal and citrus flavour. This pan-fried chicken is always a success, it’s very simple to make and therefore perfect for a quick dinner. I love making it during the week when I don’t really have any ideas for dinner. I serve this poultry dish with cooked rice, pasta or mashed potatoes. It also tastes great when served with the following additions.

Ingredients for chicken in lemon sauce.
- 2 big chicken breasts (750 g)
- 2 big cloves of garlic
- 50 ml lemon juice
- 100 g butter
- 1 tablespoon of parsley
- 2 tablespoons of olive oil
- 2 tablespoons of flour
- 50 ml water
- 1 teaspoon of Italian seasoning
- 3/4 teaspoon of salt
- 1/4 teaspoon of black pepper
- slices of 1/2 lemon

How to make chicken in lemon sauce.
Cut the chicken breasts in half lengthwise, then dredge each piece of meat in flour. Put the butter into a frying pan, pour olive oil into it, and heat it up. Then, place the previously floured chicken breasts in the hot fat, and fry them over a medium heat for 3 minutes. Turn over and fry on the other side for another 3 minutes. Next, add the mashed garlic and continue frying for a few seconds. After that, pour lemon juice and water on the breasts, add lemon slices, salt, pepper and herbs. Turn the meat from one side to the other from time to time and cook it in the sauce over a medium heat for 6-8 minutes. Finally, sprinkle the meat with freshly chopped parsley and serve with potatoes or rice.

Good to know when making chicken in lemon sauce.
If you don’t have a mixture of Italian seasoning at home, you can prepare your own mixture. You will need dried herbs such as thyme, rosemary, tarragon, basil, oregano. Simply mix the herbs together in 1 to 1 proportions.
