Many cuisines would not be the same without potatoes. It is a basis of numerous dishes and I’m sure a lot of us cannot even imagine a good dinner without it.
Most often potatoes are served in a form of puree, cakes or dumpling. For some reason roasted potatoes are not as popular, at least in my home. I make them but only from time to time. This is something I should change because roasted potatoes are a great addition to meat or fish.
Perfect roasted potatoes have crispy and gold skin, they are soft and delicious on the inside. The best roasted potatoes are made with duck lard and that is exactly what I did in this recipe.
Ingredients for roasted potatoes.
- 1 kg potatoes
- 1 teaspoon of salt plus additional salt for sprinkling roasted potatoes
- 3 tablespoons of duck lard
- 3 cloves of garlic
- 3 springs of fresh rosemary
How to make roasted potatoes.
Wash the potatoes, do not peel, then put them in water, add a teaspoon of salt. Bring the potatoes to boil and simmer for 20 minutes. After that, drain the water, add the duck lard, sliced garlic and salt (that is if you want to add salt to the potatoes at all). Cover the pot with a lid and gently shake it several times until the duck lard dissolves.
Place the potatoes on a baking tray lined with baking paper and add the rosemary. Put the tray into an oven preheated to 200 degrees Celsius for 40 to 45 minutes. During baking, occasionally shake the baking tray or turn the potatoes over with a fork so that they are evenly baked on all sides.
Good to know when making roasted potatoes.
It is worth opting for potatoes that are intended for baking, i.e. varieties such as Desiree.
I used medium and small sized potatoes. I baked the small ones as whole and cut the medium ones in half.
The duck or goose lard is great for baking potatoes. You can buy it in most stores.
Before placing in the oven, I sprinkle the potatoes gently with freshly ground salt. I literally added only a little bit of it.
