With a Hungarian husband, there is no way I can avoid cooking Hungarian dishes. At the beginning it was hard for me because I couldn’t make too many, but now I’m starting to reach perfection: D I got converted and now I like dishes with lots of paprika and Hungarian spicy meats.
There are some Hungarian dishes that I make quite often at home. These dishes are: casserole with spicy sausage, galuska and chicken in paprika sauce. I have also already shared with you a recipe for Hungarian fish soup, which I think tastes amazing. I have the recipe from my mother-in-law, she has been making this soup for a long time.
Hungarian galuska or nokedli is a type of noodles served as an addition to meat dishes, mainly dishes that have some sort of sauce included. These noodles are made from eggs, flour and water, and they get their shape thanks to a special grater.
Ingredients for galuska.
- 3 big eggs
- 1/2 teaspoon of salt
- 300 ml water
- 500 g plain flour
- 1 teaspoon of salt
- 2 tablespoons of sunflower oil
- 250 g quark cheese
- 1/2 teaspoon of salt
- a bunch of fresh chives
- 250 ml sour cream
How to make galuska.
Galuska: break the eggs into a bowl, add the flour, 1/2 teaspoon of salt and water. Mix into a homogeneous consistency using a fork or a whisk.
Pour water into a large pot, add 1 tablespoon of salt and oil to it, then bring it to a boil. When the water begins to boil, reduce the heat to medium and use a dumpling grater or a fork to make the noodles. Stir occasionally with a spoon to prevent the noodles from sticking together. Cook for 3 minutes from the moment the galuska rises to the surface of the water. After that, pour the noodles into a colander, pour cold water over them and let them stand for a while.
Very often galuska is served with an addition of quark cheese.
Cheese addition: put the quark cheese in a bowl. Add salt, finely chopped chives and cream to it. Mix it.
Good to know when making galuska.
I used a special noodle grater. You can buy such a grater on the internet. The advantage of this grater is that the noodles have a specific shape and can be made very quickly.
However, if you do not want to buy one, you have no other option but to use a spoon or a fork to put the noodles on the water. The noodles you pour over the boiling water should not be too small.
