Christmas apple cake
Everybody loves apple cake. People often bake it for special occasions, but sometimes without any occasion, on a gray Monday or a boring Wednesday.
Apple pie is the most famous of all, of course. I bake it myself quite regularly. In my apple pie, apples must always have a consistency of puree, otherwise my husband will complain.
The other day, I made a cake using the recipe below. Not only did I add apple puree to the cake, but also chocolate, which he loves. 😀

Ingredients for Christmas apple cake.
- 500 g apple puree or cooked apples
- 300 g all-purpose flour
- 2 flat teaspoons of soda
- 1/2 teaspoon of ground cinnamon
- 1 teaspoon of ground nutmeg
- 1/4 teaspoon of ground cloves
- 100 g walnuts
- 75 g dark chocolate
- 120 g unsalted butter
- 200 g brown sugar
- 1 egg
- 1 teaspoon of vanilla extract
- a pinch of salt
- caster sugar for dusting the cake
How to make moist apple cake.
Put soft butter, brown sugar in a bowl and rub until fluffy. It is best to use a hand mixer for it. Then, add egg, vanilla extract and salt. After a few seconds, start adding the apples in small batches and keep rubbing. Finally, add the sifted flour mixed with soda, cinnamon, nutmeg, cloves, chopped walnuts and chocolate. Mix thoroughly.
Put the cake batter into a baking tin lined with baking paper, then place it in an oven preheated to 180 degrees Celsius for 1 hour.
Once baked, let the cake cool down and sprinkle it with caster sugar when it is cold.

I used apples that I had prepared for the winter in a jar.
You can buy apple puree in stores but you can also make your own puree at home. Just mix the sliced apples with a little water and simmer until soft, then blend.
The baking tin I used was round-shaped, with a diameter of 22 centimetres.
