Chicken in a pancake batter is the perfect way to use the leftover meat that is often left in the broth or after roasting the chicken. It happens quite often to me personally, because I cook only for myself and my husband and we are not always able to eat everything at once 🙂

I took the below recipe for chicken in pancake batter from my mother, who used to prepare this dish for Sunday lunches. She usually served it instead of meat, with an addition of mashed potatoes and salad. I recommend this dish for dinner, lunch, but also as a snack, because it works equally well in this role.

Ingredients for chicken in pancake batter.

  • 250 g baked or boiled chicken
  • 1 tablespoon of oil
  • 150 ml milk
  • 150 ml sparkling water
  • 80 g all-purpose flour
  • 1/2 teaspoon of salt
  • a pinch of pepper
  • 1 small egg

How to make chicken in pancake batter.

Crack an egg into a bowl, and add water, milk, 1/4 teaspoon of salt, pepper and sifted flour to it. Use a hand whisk to combine all the ingredients into a lump-free, homogeneous batter.

Cut the chicken into smaller pieces, season it with 1/4 teaspoon of salt. Pour the oil into a frying pan and heat it up. Then, pour in about 1/4 part of the pancake batter on it and fry it for 20-30 seconds over a medium heat. Next, evenly place the chicken pieces on it and cover them with the remaining batter. Cover the frying pan with a lid, reduce the heat to low and fry until the top layer of the batter is almost completely cooked. At that point, carefully turn the cake over and continue frying for a few more minutes. Serve the chicken in batter with potato puree, or by itself or with an addition of salad.

Good to know when making chicken in pancake batter.

You can replace the sparkling water with still water, or you can use only milk when preparing the batter.

I seasoned the chicken with 1/4 teaspoon of salt, but you can add a little more. It all depends on how salty you like your dishes.

For frying, I used a 20-centimeter wide pan.
