Green curry is a dish originated from Thai cuisine. Its basis is green curry paste and coconut milk, which can be combined with poultry, fish, seafood or any other meat. Green curry paste is made from green chilis, onion, lemongrass, coriander, shrimp paste and galangal spice. When it comes to serving, green curry can be served with rice or quinoa, sprinkled with freshly chopped coriander and chili. This dish works well when served for lunch or dinner.

Ingredients for Thai green curry.
- 1 tablespoon green curry paste
- 250 ml coconut milk
- 2 tablespoons of sunflower oil
- 450 g boneless chicken thighs
- 1/2 teaspoon of salt
- 3 curry leaves
- juice from 1/2 lime
- 100 g green bell pepper
- 150 g green beans and sugar peas mix
- 100 ml water
For serving: boiled rice, freshly cut chili pepper, optionally coriander.
How to make Thai green curry.
Pour the oil into a frying pan, add the curry paste and fry for 30 seconds over a medium heat. Subsequently, add the diced chicken drumsticks and continue frying for 5 minutes. Then add coconut milk, diced green pepper, peas, curry leaves and water. Bring it to a boil, then simmer for 10-12 minutes. At the end of cooking, add salt and lime juice. Serve the green curry with boiled rice.

Good to know when making Thai green curry.
You can replace the chicken thighs with chicken breast or turkey.
