Ingredients for potato croquettes with frankfurters.

  • 600 g unpeeled boiled potatoes
  • 200 g all-purpose flour
  • 1 egg
  • 1 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 10 pieces of long frankfurters
  • 50 g sera cheese

Coating:

  • 1 egg
  • 8 tablespoons of breadcrumbs
  • 4 tablespoons of all-purpose flour

Additionally: sunflower oil for frying.

How to make potato croquettes with frankfurters.

Mash the cooked but still warm potatoes with a potato press. Add flour, egg, salt and pepper. Knead the potato dough, then form balls from it and flatten them on your hand. Once flattened the cakes should be long and wide enough to allow you easily cover the frankfurters. Place a frankfurter in the center of each cake, sprinkle with a little grated cheese, then wrap thoroughly with potato mass and form an oval-shaped croquet.

Dip the croquettes first in flour, then in the beaten egg and finally in the breadcrumbs. Place the croquettes on a plate and put them in the fridge for 20 minutes. Pour the oil into a large frying pan, heat it up and when hot, put in the croquettes. Fry on a medium heat until golden brown on both sides, it should take 6-7 minutes. I recommend serving the fried croquettes with béchamel sauce.

I used frankfurter sausages. Each sausage was 9 centimetres long.

I did not peel the potatoes, the only thing I did before boiling them was washing them thoroughly.
