For as long as I can remember, zucchini stew has been made in my house. Depending on what was available at the given moment, the stew also included carrots, onions, tomatoes, peppers and mushrooms apart from the zucchini. It also contained smoked sausage, smoked bacon or sausage and bacon. The following recipe for zucchini stew contains almost all of the above-mentioned ingredients, except for peppers and mushrooms. These two ingredients are normally not the basic ingredients of my zucchini stews, only additives I use from time to time.

I usually serve the zucchini stew with bread. It is also a nice side dish that can be served as an addition to meats.

Stew made from zucchini

Ingredients for zucchini stew.

  • 1 kg unpeeled zucchini stew
  • 200 g carrot
  • 200 g onion
  • 500 g tomatoes
  • 2 bay leaves
  • 1 full teaspoon of potato starch
  • 50 ml water
  • 2 tablespoon sunflower oil
  • 200 g smoked sausage
  • 1 teaspoon of sweet paprika powder
  • 1/2 teaspoon of spicy paprika powder
  • 300 g smoked bacon
  • 1 flat teaspoon of salt
  • 1/2 teaspoon of freshly ground black pepper
  • 1/2 teaspoon of caraway
  • 1 big clove of garlic

How to make zucchini stew.

Wash the zucchini, dry it and cut it into 2.5 cm wide cubes.

Put the diced smoked sausage with bacon and oil into a large frying pan. Fry over a medium heat for 7-8 minutes. Then, add the finely chopped onion and the mashed garlic. Continue frying for 4-5 minutes. After that, add sweet and hot paprika powder, diced carrots, caraway seeds and bay leaves. Fry for a minute and add cut zucchini, chopped tomatoes, salt and pepper. Cover the pot with a lid and simmer over a low heat for an hour, stirring occasionally. At the end of stewing, pour in the potato flour dissolved in water. Serve the zucchini stew with bread, rice or as an addition to meat dishes.

Good to know when making zucchini stew.

The weight of vegetables is given after peeling.

Remove the grains from the ripe zucchini. The easiest way to do it is with a spoon.

I always add smoked sausages without its skin because I don’t like hard pieces of sausage in the stew. You can also remove the skin from the sausage if you want to, but it is not a must.
