Bread sauce
Bread sauce is a great addition to meat dishes. It works best when served with roasted poultry. That can be a whole roasted chicken, turkey, roasted drumsticks or thighs. The preparation of bread sauce takes only a few minutes. You need to put all the ingredients in a pot and boil them, so that the flavours of the spices merge together. Ingredients for bread sauce.
- 8 peppercorns
- 100 g breadcrumbs or stale bread
- 1/5 teaspoon of nutmeg
- 1/4 teaspoon of freshly ground black pepper
- 500 ml milk
- 40 g butter
- 1/2 teaspoon of salt
- 100 g onion
- 1 bay leaf
- 2 cloves
How to make bread sauce.
Pour milk into a pot, add onion cut into large pieces, bay leaf, peppercorns, ground black pepper, cloves, nutmeg, salt and butter. Simmer for 15 minutes over a very low heat. Next, remove the milk from the heat and cool it down.
Pour the cold milk through a fine sieve to remove the additives. After that, put the milk on the heat, bring it to a boil and add the breadcrumbs. Stirring constantly, cook the sauce for 1-2 minutes. Serve the bread sauce warm.

Good to know when making bread sauce.
I usually use stale bread to prepare the bread sauce. I remove its crust, divide the soft part into smaller pieces with my hands, then chop it with a food processor. I like bread sauces prepared from such bread better than the ones made with bread crumbs.
