I do not know how many times I have seen on various forums requests from people for recipes with minced meat. The thing is that in these requests there was usually an annotation that these recipes should not be for spaghetti or lasagne. 😀 It turns out that both of these dishes seem to be too common and people got bored of them. Below, I have a recipe for a meatball salad for which I used, of course, minced meat. So if want to prepare something from minced meat other than pasta or lasagne, I encourage you to make the following salad.
Ingredients for meatball salad.
- 100 g pasta – any type (plus 1 teaspoon of salt)
- 100 g red onion
- 125 g Parmezan cheese
- 500 g cocktail tomatoes
- 500 g minced meat (I used turkey)
- 1 egg
- 3/4 teaspoon of salt
- 2 tablespoons of breadcrumbs
- a pinch of black pepper
- 250 g Greek joghurt
- 1/2 teaspoon of salt
- a pinch of green pepper
- big bunch of fresh basil (10 gr)
How to make meatball salad.
Meatballs: put minced meat, salt, pepper, egg and breadcrumbs in a bowl. Knead the meat with your hand for a few minutes and lightly pat it to let the air break out of it. After 4-5 minutes of kneading, set the bowl aside for 30 minutes. After that, form mini meatballs with a diameter of 2 centimetres. Place the meatballs on a baking tray lined with baking paper. Preheat the oven to 200 degrees Celsius then place the tray in. Bake the meatballs for 30 minutes, turning them over once during baking. After baking, let them cool down.
Dressing: place chopped basil, yoghurt, salt and pepper in a cup. Mix with a blender.
Cook the pasta along with a teaspoon of salt according to the instructions on its package. When the pasta is cooked, put it into a colander, pour in cold water and let it cool down.
Cut the tomatoes into quarters. Dice the red onion into small cubes. Grate the Parmesan cheese on a fine-mesh grater.
Combine the pasta, tomatoes, cheese, onion and meatballs in a bowl and drizzle with the dressing.
Good to know when making meatball salad.
You can use any type of pasta for making this salad but its size should be small. You can select all kinds of shapes such as shells, twigs, bows. I used diamond-shaped pasta.
For making the meatballs, use chicken or turkey meat as they have less fat than pork.
