Fruit cakes are one of the easiest and tastiest cakes you can bake. Thanks to the addition of fruit, they can taste different every time – all depends on what fruit you choose. My fruit cakes usually contain apricot, strawberries, plums, cherries or apples. Personally, I usually focus on seasonal as well as generally available fruits. I select exotic fruits, such as pineapple, less frequently but this time it was such an occasion.

When I buy pineapple, it is usually canned. Fresh pineapple is not always available but even when it is, it can sometimes cost fortune. Many times, I also struggle with using the whole fruit at once, as it can be too much for me. This time, I opted for pineapple in a cake and it was a great idea. I was able to use the majority of the fruit, only a small amount remained, which I munched during the day.

Ingredients for pineapple cake.

  • 1 pineapple
  • 4 eggs
  • 70 g crystal sugar
  • 70 g light brown sugar
  • 100 ml milk
  • 100 ml sunflower oil
  • 300 g all-purpose flour
  • 1 and 1/4 teaspoon of baking powder
  • 1/4 teaspoon of salt
  • 1 teaspoon of lemon juice
  • 1 teaspoon of vanilla extract
  • icing sugar for sprinkling the cake

How to make pineapple cake.

Pour crystal sugar, brown sugar and eggs into a bowl. Rub the ingredients into a fluffy and almost white cream. At that point, gradually add the oil, then milk, lemon juice and vanilla extract.

Sift the flour with baking powder and salt. When done, add them to the egg mixture and mix thoroughly.

Peel the pineapple, discard the middle and cut it into half a centimetre thick slices.

Line a baking tin with baking paper and pour in the cake batter. Arrange the pineapple slices one by one on top of the batter.

Put the cake in an oven preheated to 180 degrees Celsius and bake for 40-45 minutes.

Once the cake is cooled down, sprinkle its top with icing sugar.

Good to know when making pineapple cake.

The baking tin that I used was rectangular and measured 25 by 30 centimetres.

All the ingredients should be at room temperature.

The pineapple I used was very ripe, juicy, sweet and quite large.
