Kohlrabi in cream sauce
A soft, creamy kohlrabi with carrot, onion and spices is the perfect vegetarian dish for cold days.

I got the recipe for this dish from my Hungarian grandmother. This type of dish can be prepared from most vegetables, what’s important is that they should be soft, very thick in consistency and seasoned with sour cream at the end of cooking. This method of preparing vegetables is very popular in Hungary and despite the fact that you will not find this dish in restaurants, it is frequently made in almost every Hungarian home.
The vegetables that work best in this dish are spinach, carrot, zucchini, pea and kohlrabi. The dish can be served with an egg or with meat schnitzels (which is how it is served in Hungary).
I usually eat it by itself as it is so tasty and for me it does not need any additions.

Ingredients for kohlrabi in cream sauce.
- 700 g fresh kohlrabi
- 2 big carrots
- 1 medium-sized onion
- 2 tablespoons of butter
- 1/2 teaspoon of caraway powder
- 3/4 teaspoon of spicy paprika powder
- 1 teaspoon of sweet paprika powder
- a bunch of fresh dill
- black pepper to taste
- 1,5 teaspoon of salt
- 200 g sour cream (18%)
- 1 tablespoon of all-purpose flour
- 400 ml water + 2 tablespoons
How to make kohlrabi in cream sauce.
Peel the kohlrabi, cut it into strips, put it in a bowl and salt with 1.5 teaspoons of salt. Mix and set aside for 30 minutes. After that, drain the juice from the kohlrabi if there is any.
Peel the onion and dice it, then put it on a pan and add butter. Fry on a medium heat until golden brown. Then, add the kohlrabi, grated carrots, caraway, hot and sweet paprika powder. Fry for 2-3 minutes, then pour in 400 ml of water, cover with a lid and simmer until the vegetables are tender.
Combine the cream with flour, 2 tablespoons of water and finely chopped dill in a cup. Once done, pour it over the soft vegetables. Season with extra salt to taste, bring it to boil and keep it on the heat for 2 minutes.
Serve the kohlrabi by itself, with bread or an egg or as a side dish.

Good to know when making kohlrabi in cream sauce.
You can also add a tablespoon of vinegar to the vegetables. I did not do it myself, it’s up to you.
Simmer the vegetables until you are satisfied with their softness.
