I love eating this salad all year round, although in the summer I could eat it almost every day. This easy vegetable salad combines simple flavours and can be prepared in advance and can be combined with the dressing at the time of serving. An additional advantage of this salad is undoubtedly the time it takes to prepare it, because this Greek salad can be prepared in less than 15 minutes. The perfect complement to fresh vegetables is a light dressing prepared from olive oil, vinegar, lemon juice and spices. Ingredients for Greek salad.

  • 100 g feta cheese
  • 100 g kalamata olives
  • 30 g red onion
  • 200 g salad cucumber
  • 200 g cocktail tomatoes
  • 200 g mix of red and green peppers

Salad dressing:

  • 3 tablespoons of olive oil
  • 2 tablespoons of red wine vinegar
  • 1 tablespoon of lemon juice
  • 1 teaspoon of dry oregano or basil
  • 1/4 teaspoon of Himalayan salt
  • a pinch of freshly ground black pepper

How to make Greek salad.

Mix olive oil with vinegar, lemon juice, oregano, pepper and salt in a bowl.

Cut the cocktail tomatoes into quarters, the red onion into thin slices or into feathers, the salad cucumber into large cubes and the pepper into strips. Combine the chopped vegetables with the dressing, then sprinkle with crushed feta cheese and mix gently.

Good to know when making Greek salad.

I don’t peel the vegetables, I just wash them very well and dry them with a paper towel.

You can replace the kalamata olives with green or black olives.

I used cocktail tomatoes in the salad, but you can use any type of tomatoes.
