Pasta with vegetables is a combination that always works. Served hot as a dinner dish or cold as a salad, it is always a very popular choice.

You can prepare pasta salads with vegetables, seafood, meat or cheese. It will fill you up and will keep you going for a few hours.

I usually make pasta salads with vegetables and chicken. This time, however, I did not add any meat to the salad, only vegetables, and even many types of it, as I only used broccoli and cherry tomatoes. These two vegetables were absolutely enough. I seasoned the salad with pesto and pine nuts.

Ingredients for pasta salad with broccoli.

  • 150 g elbow pasta
  • 1 big broccoli
  • 1 teaspoon of salt
  • a pinch of salt
  • 5 tablespoons of red pesto
  • 4 tablespoons of pine nuts
  • 250 g cherry tomatoes

How to make pasta salad with broccoli.

Pour water into a pot and bring it to a boil. When the water starts boiling, put in the broccoli previously divided into medium-sized florets. Bring it back to a boil and keep it cooking on a low heat for 4 to 5 minutes. When the broccoli is cooked, place it in a colander and pour cold water over it. Leave it to cool down.

Cook the pasta according to the instruction on its package. Add a teaspoon of salt to the water in which you cook it. For elbow pasta, the cooking time should be between 10 to 12 minutes. Pour the cooked pasta into a colander, pour cold water over it and leave it to cool down.

Wash the cherry tomatoes, then cut each of them in half.

Roast the pine nuts in a roasting pan.

Put the pasta, broccoli, chopped tomatoes, pine nuts, a pinch of salt and pesto into a bowl. Mix thoroughly but quite gently.

Chill the salad in the fridge before serving.

I roasted the pine nuts in a pan without grease, over a very low heat. It took me 3 minutes.

You can replace the elbow pasta with any pasta of your choice.

My preference was red pesto, but green pesto will work just as well in this salad.

I only put a pinch of salt in this salad. You can always add more salt as long as you don’t over-salt 🙂
