Baked sweet potatoes served with ricotta cheese and natural yoghurt is an idea for a cheap, meatless dinner. After baking, the potatoes are soft on the inside, while on the outside they have a delicious, crispy crust. I start baking sweet potatoes by thoroughly scrubbing their skin under running water. I do this most often by using the rough side of a clean dish sponge. Dry the washed potatoes and cut them in half, because the potatoes will bake faster when halved. There is nothing to prevent you from baking them as whole, but then it may take a little longer. When it comes to baking sweet potatoes, a temperature above 200 degrees Celsius will be the best. Of course, the higher the temperature, the faster the potatoes will be baked, but be careful as too high a temperature will make it easier to burn their skin.
Like traditional potatoes, sweet potatoes taste great when served with cheese. The cheese side dish, which I serve with sweet potatoes, is based on ricotta cheese and yoghurt. Ricotta cheese has a more delicate taste and a creamier texture than cottage cheese, therefore it goes well with these potatoes. Season the combination of ricotta and yogurt with herbs such as oregano, chives and garlic. The cheese seasoned in such way has a distinctive flavour and complements the slightly sweet sweet potato flavour well. - 700 g sweet potatoes (2 big)
- 100 g ricotta cheese
- 250 g natural yoghurt
- 1/2 teaspoon of dry oregano
- 1/4 teaspoon of salt
- a bunch of fresh chives
- a pinch of garlic powder
How to make bakes sweet potatoes with cheese.
Wash the sweet potatoes under running water, dry them and cut each one along in halves. Wrap each potato half in aluminium foil, then put them in an oven preheated to 210 degrees Celsius for 1 hour and 20 minutes. Remove the baked potatoes out of the oven and carefully take off the aluminium foil.
Put the ricotta cheese, natural yoghurt, salt, garlic powder and dried oregano into a bowl. Mix it. Serve the baked potatoes with the cheese, additionally sprinkle with finely chopped chives.
Good to know when making baked sweet potatoes with cheese.
You can replace the garlic powder with fresh garlic. One small clove of fresh garlic is more than enough.
The dried oregano can be replaced with fresh one. Also, the ricotta cheese can be replaced, for example with cottage cheese.
Depending on how large your sweet potatoes are, they may take a little more or less time in the oven. While baking, it is best to check them with a fork from time to time.
